Ingredients
- ¾ cup sugar
- 1 cup margarine/butter or ¾ cup oil
- 1 egg
- 1 tsp. vanilla extract
- ¼ cup honey
- 2 ¾ cups flour
- 1 tsp. cardamom
- ½ tsp. ground ginger
- ¼ tsp. baking soda
- 1 tsp. kosher salt
- Zest of 2 oranges
Directions
- Cream sugar, butter until fluffy.
- Add egg, vanilla, and honey, and mix until fully incorporated.
- Add one cup of flour together with the cardamom, ginger, baking soda, and salt.
- Mix until just combined.
- Add remaining flour until the mixture comes together.
- Gently knead in the zest
- Rest the dough in the refrigerator, covered, for 30 minutes.
- Roll the dough into evenly-sized balls (tablespoon spoon scoop size)
- Place on a parchment-paper lined baking sheet and gently press down.
- Bake at 180°C for 12 minutes.
- Wait for the cookies to cool before removing from the baking sheet.
