Main ingredients
1 medium cabbage – throw away outer leaves and hard core
1 apple – chopped
2 medium chopped onion (can be 1 white and 1 red)
Good handful of sultanas or currents (soaked in rum if you wish)
3 tablespoons of dried cranberries
Good amount of garlic – fine chopped – 1 bulb is good enough
3 fresh medium carrots – peeled and shredded
1 celery stalk cleaned and chopped
1 thin sliced red or yellow capsicum (or both)
1 cup (170 grams) mayonnaise (just enough to bind the ingredients together)
Add tropical flavors
1 tablespoon favorite herbs – eg. oregano, parsley, zatah, etc
Chopped mango / papaya / pineapple to suit your taste
1 teaspoon 7 spice powder
1 teaspoon crushed black pepper
1 pinch of chili flakes
1 teaspoon fine chopped ginger

What to do
Shred the cabbage: Cut the cabbage in half , the quarters. Peel off a few of the thin outer layers. Cut out the tough core in the middle. Slice each quarter crosswise into thin shreds, or run the quarters through a food processor with a shredding blade. Transfer the shredded cabbage to a large mixing bowl.
Dry mix everything apart from the Mayonnaise
Blend in some dry white wine or apple cider – small amount – if you wish
Add enough mayonnaise to bind everything together without making it too sloppy.
Chill for an hour in the fridge – to combine the flavours.
Server and enjoy.
To keep
Cover and place the leftovers in the fridge and it should keep for a few days – depending how tasty it is to the fridge bandits!
